Lamb pörkölt in cauldron (Birkapörkölt bográcsban)Ingredients2 kg lamb meat150 g smoked bacon (cubed) a big wood spoon pork fat 4-5 big onions half garlic head 3-4 tbsp good homemade paprika (from Kalocsa area) 1 tsp Erős Pista (Hungarian hot paprika cream) 1 tsp ground black pepper 1-2 tomato and green pepper 1 bay leave 1 little rosemary salt Instructions1. Soak the meat in cold water.2. Bake the cubed bacon in pork fat. 3. Bake the diced onions in this pork fat until golden color. 4. Cut the meat in cubes and put into the cauldron. 5. Add salt and mix it in every 2-3 minutes. 6. Sprinkle with Hungarian paprika powder a cover it. 7. Let it simmer at moderate heat about 20 minutes. 8. Add the chopped garlic cloves and the rosemary. 9. When the meat is almost tender, add the tomatoes, paprika rings, ground black pepper and the bay leave. 10.
