Stuffed goose neck

Ingredients

1 goose neck
150 g goose meat
2 large cooked potatoes
1 onion
4 + 2 tbsp goose fat
salt, ground black pepper

Instructions

1. Carefully remove skin from goose neck so as not to damage it.
2. Turn neck skin inside out and scrape away the fat. Return it to original shape.
3. Mix the cooked potatoes, with the chopped meat, chopped onion and the spices.
4. Fill the mixture into the goose neck and and place in a pot with 100 ml of boiling salted water and 2 tbsp goose fat.
5. Cook covered on low heat 1/2 hour and uncovered 1/2 hour.
6. Slice, decorate and serve warm, or cold.
