By using the technique of confit to cook the sausage or other slaughter products, the meat is very tender, moist and succulent.
1. Preheat oven to 275 F.
2. In a skillet heat 2 tablespoons of 2-3 tsp fat, or oilt. Place the sausages in a pan. Pour the melted fat over the sausages.
3. Cook slowly at a very slow simmer until the sausages are ready and tender about 50 - 60 minutes. In the last cooking time heat the oven to 180 C/350 F for 5 minutes.
4. Remove from oven serve hot.

2. Layer the baking pan with aluminum foil or parchment paper.
3. Place the sausages evenly on the cooking sheet.
4. Cook in the hot oven for about 20-25 minutes, turning halfway.
1. Place the links on the grill over moderate direct heat to brown the skins and give them flavor.

3. Brown all sides to a golden brown.

Open the filling attachment and fill the barrel with flavored meat mixture. Fill it without air bubbles!
Soak the hog/lamb casings in a small bowl of cold water. Change the water two-three times. Hold one end of the casing up to a tap and add some cold water. Pinch off that end and slosh the water around inside the casing, working your way to the other end. Empty the water completely from the casing and collect in a bowl for use.
When the casing is full, remove it from stuffing machine and tie a knot in one end.
Decide the sausage on the length, pinch the sausage at this point and twist it clockwise two times.
You can tie the ends with kitchen string too.
1. Put the links into the smoker, and adjust the temperature to no more than 100 F.
2. Open your smoker dampers all the way The moisture needs somewhere to escape.
3. Check it often, and be sure to check more than one link for dryness.
- Use fresh sausage stored in the refrigerator within two days of filling.
- You can freeze fresh sausage for 3-4 months without affecting the flavor and quality of the sausage.
- If you have leftover sausage mixture, you can use it to make delicious meatballs.
- Eat or cooked sausage within 3-4 days.
