Rabbit in “Wild” Style

Ingredients

- 2 rabbit thighs (of the back legs)
- 1 rabbit backbone
- 2 carrots
- 2 parsnips
- 1 small celery
- cca. 3 oz wine
- 1 small onion
- cca. 6 oz sour cream
- fat
- 5 grains of pea
- paprika
- lemon
- mustard
- salt

For the souse:
- 1 onion
- 2 cloves of garlic
- 2 l water
- 8 grains of pea
- 5 grains of coriander
- 5 juniper berries
- 2 bay leaves
- 1 nutmeg flower

Instructions

1. Mix and cook the ingredients of the souse for 20 minutes.
2. Wait until it cools down, then add the meat.
3. Move the meat around every day for a week.
4. On the day of the cooking wipe the souse off the meat.
5. Dip the meat into hot fat, then steam it together with the veggies, onion and pepper.
6. When everything gets soft, grind the veggies, put them back in the gravy and scramble.
7. Flavour with mustard, lemon peel and juice.
8. Serve with spaghetti.
