Fresh sausage 2.

Ingredients

5 kg ground pork
3 kg fresh pork fat
300 g mushrooms
1 l dry red wine
50 g crushed white pepper
30 g sweet paprika, 250 g salt

Instructions

1. Place meat in a large bowl.
2. Add all ingrediens. Knead by hand to incorporate all seasonings.
3. Refrigrate overnight.
4. Next day, either stuff into sausage casing and freeze them, although they will stay good in the refrigrator for several days, or freeze the rest.
