Jewish duck fat
Ingredients1 lb duck fat, rougly cut
1/2 cup water
1 medium onion, quartered
Instructions1. Put all ingredients in a heavy pot with a cover on a medium fire.
2. As the water boils, it will begin to render the fat.
3. Leave the cover on until the sound of the water boiling and crackling is done.
4. Now remove the cover and lower the heat to low.
5. Drain the clear duck fat at the first sign of browning.
